One of our co-workers brought in some huge, homegrown zucchinis. Last week I cut it up and stir-fried it with garlic, onions, tomatoes and mushrooms, then I topped it off with some Jack cheese. Very yummy served up with grilled chicken. This time around I'm thinking quiche -- a creamy zucchini quiche. It's fabulous served up with a crisp green salad and glass of white wine. Yum!

We love zucchini. Stirfry sounds good. I have never done that before with it.

My daughter just helped a neighbor get her new computer all set up 3 days ago, and came back in with 2 HUGE zucchini squash! I, too, did stir fry with chicken tenders cut up, (wish I had had fresh musrooms) My MIL is visiting next week, so I may just have to do the quiche. I'm inspired. I was going to do zucchini bread, but the quiche sounds so good for a lunch.

Hello ladies! Zucchini is such a versitile veggie. About the only way I don't like it is steamed. Yuck! I made the zucchini quiche yesterday. I cut corners and purchased Marie Calendar's frozen pie crusts. The recipe yielded 2 pies. My 21 yr. old daughter was visiting and she absolutely loved it. I could hear her happy eating sighs with each bite...so cute! Anyway, it was a hit!
